Thai Smoked Chicken Salad

Here's a delicious Thai salad we often make. It has the great sweet and sour taste that reminds us of the many times we were in Thailand.

Serves 4
Ingredients:
  • Chinese cabbage, thinly sliced
  • 2 small 'Little gems', thinly sliced
  • 1 red onion in thin rings
  • 2 or 3 smoked chicken breasts in slices
  • 100 gram of roasted (unsalted) peanuts or cashews
  • "Enough" Coriander (cilantro)
  • 2 carrots in thin slices
  • 1 small piece of cucumber in thin slices
  • 2 tablespoons of fish-sauce
  • 2 tablespoons of sweet chilli-sauce
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of grated ginger
  • Juice from 1 lime
Preparation:

Place the cabbage, little gems, onion, chicken, half the peanuts (or cashews) and half the coriander leafs in a bowl.
Add the thin slices of carrots and cucumber to the bowl as well.

Mix in a separate small bowl the fish-sauce, sweet chilli-sauce, rice vinegar, grated ginger and lime-juice. Stir well, so it is all mixed properly.
Pour the dressing over the ingredients in the bowl and mix together.

Serve the salad sprinkled with the rest of the peanuts (or cashews) and coriander.
