Salmon Salad

A few days ago we made this delicious salad. We served it with some dark baguette and it made a great, healthy and wholesome dinner. Here's the recipe.

Serves 4
Ingredients:
  • 300 gram of potatoes
  • salt and pepper
  • 2 Eggs
  • 1 can of salmon aprox. 200 gram
  • 2 sour pickles
  • 2 tablespoons of capers
  • 1 tablespoon of fresh dille
  • 2 tablespoons of mayonnaise
  • 1 tablespoon of crème fraiche
  • 1 teaspoon of grated onion
  • 1 teaspoon of lemon juice
  • 1 teaspoon of mustard
Preparation:

Cook the potatoes until done and let them cool down. Cut them into small cubes.
Cook the eggs for at least 8 minutes. Peel and let them cool as well. Once cooled, cut in small cubes.
Devide the salmon into small chunks and put it in a salad bowl.
Add the potatoes, eggs, pickles, and capers. Sprinkle the salad with the fresh dille.

Now make the salad dressing. Mix the mayonnaise and crème fraiche until it is smooth.
Then add union, salt, pepper, lemon juice and mustard and mix well.

Serve the salad, dressing and bread separately.
